Chocolate Mini Muffins: The Ideal Protein Way

Many of my clients come to me asking, “What can I eat while doing Ideal Protein Phase One, that is sweet?” Other than ordering the protein bars or Peanut Soy Puffs, here is another alternative to curb your sweet cravings while you are in the all-powerful, fat-burning ketosis.

1 packet Ideal Protein Chocolate Pancake/Crepe Mix + 2.5 tablespoons of water

1 packet of Dark Chocolate Ideal Protein Pudding (prepare as directed on package)

Preheat oven to 350 degrees.

Lightly coat mini muffin tray with olive oil.

Mix water and crepe mixture together. Pour into greased mini muffin tray.

Bake for 10 minutes or until toothpick comes out clean.

Let the muffins fully cool.

Prepare the pudding as directed on package. (For best results, let the pudding set for a few minutes.)

“Frost” the mini muffins with the pudding.

For a Chocolate Peanut Butter Muffins, you can add a tablespoon of PB2 (powdered peanut butter–safe for low-carb diet) to the muffin mixture before cooking.
